The camera https://en.wikipedia.org/wiki/Pilaf would have caught it – the swirl of cumin in oil, the fog on the glass lid, the way we leaned into the stillness. There’s something cinematic about spices taking their time and people who stop to notice. We weren’t talking much. Just waiting, tasting, being there. Welcome to “Spice Took Its Time: So Did We.”
The pot breathed slowly. Spice wandered unhurried – curling every corner like a memory. Outside noon leaned soft against the window. We didn’t rush. Why would we? Some meals aren’t cooked., They’re felt.

So Did We : Spice Took Its Time
Steam curls into the air as the onions soften, turning translucent, their sweetness deepening with every stir. “The raw scent is fading”, while the oil shimmers as it absorbs the essence of cumin, cinnamon, cloves and star anise. Bay leaves twist at the edges, releasing their unmistakable fragrance.
Ginger and garlic follow next, sizzling as their pungency mellows into warmth. “Let it cook a little longer”. A quick toss, then green chilies slip in, their sharpness cutting through the richness. Vegetables tumble into the pot – carrots, beans, peas, corn, capsicum, cauliflower – all variant, their colors standing out against the golden base. “Everything has to blend”, no piece is left untouched by the spices.

Garam masala dusts the surface, bringing a smoky depth, while salt balances the mix. “Now comes the rice”. Soaked basmati, strained moments ago, is poured in carefully, each grain slipping between the vegetables, absorbing the flavors. “Make sure it is coated”, while turning the spoon gently, watching the transformation. Water follows in measures amounts, sizzling as it meets the heat. A final stir, slow and deliberate, and the lid locks into place.
Three whistles breaks the quiet, then the pressure releases. The lid lifts, revealing long, separate grains – fragrant, infused with warmth, resting in harmony with softened vegetables and deep spices. A spoon dips in, lifting the first bite. “Perfect”. The dish stands ready, waiting for the cool contrast of raitha and fiery depth of a spicy curry. The first taste is everything – comfort, depth and warmth.
