Stirring doesn’t stop, – every bit must be smooth, no lumps, no burning. The besan begins to roast evenly in the ghee, turning silky and aromatic.
Alright, so you toss in two cups of sugar next. As it heats up, the mix gets a little thicker because the sugar starts to melt or dissolve. Then, you throw in a cup of milk, just enough to loosen things up a bit. After that, you fold in a full cup of grated coconut, nice and easy. It all blends together with the besan, sugar, and milk, making the mixture richer, heavier, and way more textured.
One cup of powdered cashews and badam is added. The mixture becomes dense but smooth, slowly transforming into glossy, pliable batter. It moves as one, leaving the sides of the kadai without sticking. The smell of roasted nuts, ghee, coconut fills the space completely. Consistency becomes the key here, – it must lift clean from the base, ready to pour.
