Next comes the prep that brings the kitchen to life. My knife slices through onions, falling away in translucent pieces. Tomatoes yield their ruby flesh, while ginger and garlic release bold aromas that signal something good is coming. These ingredients form the base of a flavorful vegetable biryani – a symphony of textures and tastes.

When the pan heats up and the oil shimmers, the magic starts. Whole spices go in first – cinnamon, deep and woody; cloves, sharp and assertive. They crackle in the oil, releasing comforting aromas.
